Weekend Invention #1: Poached Garlic Dressing
I made a new salad dressing in about 6 minutes, 9:45pm, Saturday. Here’s the recipe:
-6 cloves garlic, peeled
-2/3 cup heavy cream
-1 to 2 Tbsp soy sauce, dependin’ how you feel
-2 tsp rice wine vinegar
-2 Tbsp oil
-zest of 1 lemon
-2 tsp fresh lemon juice
-sea salt and white pepper, to taste
1. Poach the garlic in a small sauce pan with the heavy cream, low low simmer, 30 minutes or until garlic is completely soft to the touch. Do not burn the cream.
2. Remove garlic and a spoonful of the condensed heavy cream. Mash in a small mixing bowl with a fork.
3. Add soy sauce, rice wine vinegar, lemon zest, lemon juice, oil. Whisk firmly.
4. Salt and pepper to taste; add more soy sauce if you want, but change the name to Soy Dressing.
5. Dollop onto greens (thick consistency is good) to coat.
It will keep for about 3 days. Serves four.
